Green Chile Jiffy Corn Muffins

How can you not love Jiffy Corn Muffins?  They are probably in competition for one of the cheapest pre-made mixes in the baking aisle, and they are SUPER easy, and SO good.  Put a twist on the classic by adding some diced green chiles.  

I know this is cheating.  But ask me if I care.  They take about 2 minutes to mix together, 15 minutes to bake, and are the perfect sweet pairing for a hot bowl of chili.  Like my Go-To Crock Pot Turkey Chili perhaps?



Green Chile Jiffy Corn Muffins

Makes:  12 muffins

Ingredients:
2 boxes Jiffy Corn Muffin Mix
2 4 oz cans diced mild green chiles, drained
2 eggs
2/3 cup milk

Instructions:

Pre heat oven to 375 degrees.  In a medium bowl, whisk together muffin mix, eggs, and milk.  Add diced green chiles and mix until combined.  

Spray a muffin tin with cooking spray or line with cupcake liners.  Distribute muffin batter amongst the 12 liners.  

Bake for 15-20 minutes or until muffins are lightly browned on top and a toothpick inserted in the middle comes out clean.
