I've been really slacking on the blog front lately!  Sorry peeps.  There is so much outside work to do, and I've had a lot going on!  But never fear, I'm not going anywhere -- I just need to slow down on the #bloglife a bit.

This avocado ranch dressing is loaded with avocado, cilantro, jalapeño, and lime flavors, while still having the irresistible and creamy ranch qualities we all know and love.  It is absolutely perfect drizzled over a burrito bowl of crispy carnitas with all the fixin's!

Avocado Dump Ranch Dressing

Ingredients:

1 batch of my Whole30 Dump Ranch

1 avocado

1 jalapeño, seeds removed & diced

1/4 cup cilantro

juice of 1/2 a lime

coconut milk, almond milk, or water to thin

Instructions:

  1. Follow instructions from my Whole30 Dump Ranch recipe (and while you have all of the spices out, make seasoning packets so you don't have to get them all out next time!).
TIP:  When I make the dressing for avocado dressing, I leave out the vinegar and count on the lime juice for acidity.
  2. To the ranch dressing, add an avocado, diced jalapeños, cilantro, and the lime juice.  Blend well with immersion blender until everything is combined, there are no chunks, and the dressing is light green.
  3. Test the consistency and add some coconut milk, almond milk, or water to thin it if desired.
