Blue & White Cake Mix Cookies (with white chocolate chips and macadamia nuts!)

Penn Staters love many things... Happy Valley, football, tailgating, and ALL things blue and white!  These cookies are no exception, as I discovered this past Saturday at Blue White weekend!

If you need a blue and white treat for a tailgate, baby shower, birthday party, you name it -- these are SUPER easy and festive.  Mix in whatever you want, but white chocolate chips and macadamia nuts made for a perfect combo!


Blue & White Cake Mix Cookies

Makes: 4 dozen cookies

Ingredients
2 Duncan Hines Blue Velvet Cake Mixes
4 eggs
1 cup oil
1 cup white chocolate chips
1 cup macadamia nuts

Instructions

Pre-heat oven to 350 degrees.

Using a mixer, combine cake mixes, eggs, and oil until cookie dough forms.  Add in white chocolate chips and macadamia nuts, mixing until they are evenly distributed throughout the dough.

Scoop out onto parchment lined cookie sheets.  I used my larger sized cookie dough scoop (about 1 Tbsp full).

Bake for 8-10 minutes, until bottoms are lightly browned and tops are set and no longer doughy.

TIP:  I baked mine for 4 minutes, then switched the pans around and baked for 4-5 more.  Baking time will depend on your oven, so keep a close eye on them!

Allow to cool for 1-2 minutes, then remove to a cooling rack.  Once completely cool, store in an airtight container.
